Addicted To Avocado’s

It’s true.  I am addicted to Avocados, thank goodness they are so good for us.  I know they are high in fat, but everything now points to the fact that Avocado’s are “good” fats.  They are supposed to reduce levels of bad cholesterol in our blood which then reduces the risk of strokes and heart disease.  Great hey!?!  Well thats not all, they are high in protein and very low in sugar as well as being an excellent source of potassium. Is it the Holly Grail of superfoods?

I have created the easiest avocado recipe that is packed full of goodness and super quick and super yummy.  It is snippets of lots of peoples recipes that I have found mainly on Pintrest which is just the most brilliant place for inspiration.

This sauce is brilliant stirred into a bowl of steaming spaghetti, or spread on toast with a poached egg on top.  Actually you can be really creative and use it for all sorts or simply as a dip.

Ingredients:

  • 1 clove of glaric
  • 2 handfuls of uncooked spinach
  • 1 handful of pinenuts
  • 1 handful of basil leaves
  • 1 squeeze of lemon

Maybe a splash of water, salt, pepper, chilli flakes, parmesan shavings…anything goes really.   I would recommend that you serve straight away as the avocado can turn brownish.

I simply chuck all of the above ingredients into my food blender and whizz it up until I am happy with the consistency.  How simple is that!?!  Obviously you MUST serve in our melamine bowls (the new large butterfly bowls are perfect!) and eat from our melamine dishes and drink from our melamine cups!!  Tee Hee!!
