So our “Party Time” tipple has been a classic Mojito since our girls trip to Barcelona a few years ago. My girlfriends and I have spent many an evening perfecting our magical mojito recipe and we are delighted to share it with you. Obviously we think it is best served in a RICE acrylic tumbler from www.pinksandgreen.co.uk but a plain or printed melamine cup works just as well, just be sure to finish it off with a flamingo straw!
Ingredients:
- 50ml White Rum
- 1 splash of soda water
- 2 tsp caster sugar
- 2 wedges of lime
- 1 sprig of mint
Directions:
Turn up the cheesy music, mix and muddle the sugar and lime wedges in the acrylic tumbler with a spoon, gently squeezing them to release the flavours and aromas, then add the mint and continue to squeeze and press them together, as if in a pestle and mortar.
Add crushed ice (place your ice cubes in a freezer bag and hit them with a rolling pin or bash the bag against the work surface to crush) until the beaker is 3/4 full.
Add the white rum and splash of soda, mix and stir.
Top up your glass with ice, add a sprig of mint or two and of course your flamingo straw.
Enjoy.
