Em’s Granola

I have a friend called Emma, she is a bit of a Super-Mum…always looks great, house is always clean and tidy…her kids are always well behaved AND she cooks almost every meal from scratch! Well if she wasn’t so lovely and so much fun I would hate her! (I always look like a scarecrow, my house is a tip, to be fair my kids are great but I just don’t find much time left to cook everything from scratch which is a shame because I love cooking (and eating!)

One afternoon Emma had had enough of my moaning and groaning, she arrived at my house with the kids and a bag full of ingredients. We had so much fun (2 adults, 4 kids, 1 sausage dog and 1 doogle…not sure of his breed)

We made the yummiest, simplest granola ever. My kids and I have quite a few early mornings (they swim) so what to give the kids at 4.30am has always been a bit of a problem for me, this is Em’s solution. It is delicious, we nibble on it dry, add Greek yogurt and berries to it or just simply add milk.

Emma’s Pecan & Cashew Granola

Ingredients:

  • 3tbl coconut oil
  • 3tbl maple syrup
  • 3tsps cinnamon
  • 2 melamine cups of oats
  • 1/2 melamine cup of sunflower seeds
  • 1/2 cup pumpkin seeds
  • 1/2 cup crushed or broken mixed cashew nuts and pecan nuts

Method:

  • Pop the coconut oil, maple syrup and cinnamon in a bowl and melt together then place to one side
  • In a large mixing bowl (we used the new melamine butterfly print bowl) mix the oats, sunflower seeds, pumpkin seeds, crushed pecans and crushed cashews
  • pour the melted coconut and syrup mixture over the oats mixture and stir until all the ingredients are well coated (we used the large melamine serving spoons)
  • spread onto a baking dish and pop in the oven of about 30 minutes depending on your oven until it is golden brown and nicely toasted
  • we stirred ours a couple of times during baking
  • allow to cool and store in one of our airtight containers
